Shop My Pantry: Week One Recap

Hey everyone! I decided it's better to do weekly recap posts instead of a post every day. Here we go:

Be ready for lots of pictures!

So, I didn't spend any money on food this week! But, I was taken out to lunch by my grandmother and I received a package of vegan almond biscotti as a late Christmas present. So "free" food did happen.

I have also managed to get myself sick. So I have spent the last two days in bed I'm drinking tons of fluids. I've been eating a lot of leftovers, things I don't have to cook, and drinking vegetable broth. I'm hoping that next week will be a little bit better. I've got a few things that are easy to make, but they're really spicy and I don't want to aggravate my sore throat. I'm planning to start using up my giant box of snack foods... Whenever I get back out into the real world instead of sitting in bed all day.

I think the foods I enjoyed most were the pasta dishes and rice dishes. They were the easiest to make and very flavorful.

Also, eating leftovers has cleared up a lot of room in the fridge! I've still got way too many condiments in the door, but it's getting a little more manageable.

Next week I plan to start tackling my boxes of "instant" foods (instant noodles, boxed meals, and pre made mix kits)... I've got a bunch of those and they need to be eaten up before they expire.

I might have to go to the store soon to get some essentials like tomatoes/tomato paste. We are totally out and no one has gone grocery shopping in a week. With four of us here, we're eating through the fridge and pantry rather quickly.

I've got tons of bouillon cubes and broth power for making soups, and several cans of beans... I might make some kidney bean hummus this week! It would be a fun experiment.

Since I'm sick, I'm not planning on going out much, so I don't have to worry about eating out this week (I'm pretty sure that I got sick because I went out in this cold when I hadn't slept well the night before). If I go out, it will be to the pharmacy or the doctor.

Overall, this week wasn't bad at all. I still had tons of fresh food, so I didn't feel like I was missing anything. Next week will probably feel the same... I've got 4 veggie burgers left in the freezer, as well as mustard greens, peas, corn, and bag after bag of frozen fruit.

Have any of you done Shop Your Panty before? Did you enjoy it?

PS: this halo top dairy free ice cream is the bomb!

Fellowship Of The Ring Eat-athon

Fellowship Of The Ring Eat-athon, Part One! (We are pacing ourselves with small portions... It's the reason for the half apples or cupcakes!) We begin with a hobbit chomping into a cake! We started by eating half of a vanilla cranberry cupcake! And there's a number of times tea is made in the Hobbiton, so go ahead and make a whole pot (we drank this lovely Earl Grey blend from @adagioteas fandom blends) Bilbo Baggins turns 111! So we eat the other half of the cupcake! Merry eats an apple to look nonchalant while stealing fireworks with Pippin. After seeing some elves in the forest, Sam can't sleep on the hard ground and eats some bread in the middle of the night... My kind of hobbit! Then, as we make it to Bree, we see Peter Jackson take a huge bite out of a carrot... We had baby carrots😂 Pippin's infamous Second Breakfast scene gives us another opportunity to eat an apple! ...

Vegan "Egg Salad" Recipe

I think I may have perfected my vegan "egg salad" recipe! Ingredients 1 block of firm or extra firm tofu 1/4 cup Just Mayo (or other vegan mayonnaise) 2 tbsp yellow mustard 1/4-1/2 cup diced white onion 1-2 dill pickles diced (or 1-2 tbsp sweet pickle relish if you like sweet pickles) Salt Pepper Mash up the tofu and mix together all the ingredients until they are thoroughly mixed. It tastes best if it is let to sit in the fridge for several hours to give the flavors time to meld. Serve on bread, rice cakes, with pita chips... However you most enjoy your "egg" salad! Makes four servings If you like this recipe, check out my Instagram where you can see my daily food posts! @knittingopera

Vegan Red Beans and Rice

This is my favorite local food. Since going vegan I don't eat it a lot, since I can't order it at restaurants because they are full of meat. It's actually really easy to make, and is super tasty. Everyone has their own family recipe, it seems, for red beans. You will find so many people using different ingredients to make them taste amazing. This is just my take on red beans and rice, New Orleans style, without the meat. Enjoy! Variation 1: the easy way Ingredients: 2 cans no salt added red kidney beans, drained 4 stalks celery, chopped 1/2 red bell pepper, chopped 1-2 tbsp olive oil 1 tsp garlic powder 1/2 tsp cayenne pepper 1/4 tsp onion powder 1 tap kosher salt flakes Directions: Throw everything in the pot except the beans and cook until soft. Add beans and a little water and cook until thoroughly heated. Take a hand blender and puree 1/2 the pot until smooth. Mix together and serve with rice. Variation 2: the long version Ingredients: 1 package ...
